In honor of Impossible Astronaut Day (April 23rd), an unofficial Doctor Who celebration, we have put together a recipe and tutorial for homemade jammie dodgers. In this youtube tutorial Tiffany Cagle, @adventuresofthegeekybaker, will walk you through step by step how to make the delicious treat.
Jammie Dodgers are a British treat, a biscuit filled with jam. It became a part of Doctor Who lore in the episode “Victory of the Daleks” when the Eleventh Doctor (played by Matt Smith) fooled his enemies, the Daleks, into thinking a jammie dodger was a self-destruct button for the TARDIS. The destruction of the TARDIS, his time-traveling spaceship, would have killed both him and the Daleks. But, of course, it was just a biscuit and so it didn’t. The jammie dodger has since been affectionately used or mentioned in other Doctor Who episodes, novels, and comics. It has also been embraced by fans of the show.
For this, you will need the following ingredients:
Mix the butter, vanilla, and sugar until the mixture is light and fluffy (3-4 minutes). Scrape the sides and bottom as needed to ensure even mixing.
Mix the yolks and flour into the butter mixture until combined. The mixture will be soft and slightly sticky. Take the dough out of the bowl, divide i
n half, wrap each disk in plastic wrap and chill for at least one hour to rest.
Heat the oven to 350 degrees and line baking sheets with parchment paper (do not spray with grease).
Place the dough onto a lightly floured surface and roll out to between 1/4 inch to 1/2 inch thickness. Using a cookie cutter, cut out 12 circles.
Using a piping tip (or a mini cutter if you have one) cut out the center. Place evenly on the first baking sheet.
Roll out the second disk and cut out 12 circles. DO NOT CUT OUT THE CENTER. These will be the base.
Bake for 10-12 minutes just until lightly golden brown. Be careful, these will brown really quickly!!
Remove from oven and cool on for 5 minutes. Remove to a wire rack to cool completely.
Once cooled completely, turn the base cookies bottom-up and add a teaspoon of jam to the center of each.
Gently press the tops to each cookie. The bases will be soft so be as delicate as you can. Serve sprinkled with powdered sugar.
Store at room temp in an airtight container for upwards of 3 days.
